This has been my best beer so far. I really see the value of controlling water chemistry now, since I've never had such a clean hop flavor. The amarillo and cascade, as you would imagine, give the beer a nice citrusy flavor and there is just enough malt backbone there to support the hops. The aroma is very nice as well.

Next time, I may throw in a little bit of crystal malt or carapils to bump up the malt backbone slightly, and I may try dry hopping with some amarillo. Overall, I'm very happy with how this one turned out.

Thanks guys. I need to get a better picture of it. It's crystal clear and a bright golden color. This pic makes it look darker and less clear than it really is.

I got a few more reviews of the beer, and the general consensus is that it could use a bit more malt. I agree. What kind of malt would give it more of a backbone, but not overshadow the hops?

A mixture of light and dark crystal will sweeten it up some and give it a more malty body. Maybe 12oz. C20 and 6-8 of C60.

Or add about 2-3lbs. of belgian munich. I don't put much stock in domestic vienna/munich. Breiss' munich seems no different than regular 2-row everytime I've used it.

Thanks for the suggestions. The only thing that worries me about the darker crystal malts is that I will lose the golden coloration, although better flavor will beat out better color any day.

What do you think about adding some carapils? Seems like it would add body without adding much color.

I was actually going to mod. my post and add that, if you like the flavor of the beer the way it is then just add a lb. of carapils. Pretty much adds body w/o flavor. Ya beat me to it. Good thinkin!

You know, I had more people try this beer and they loved it. It's light, but it has a nice hop flavor that makes this a great session beer. Very clean. I think I may just keep it the way it is.
