White Labs - Hefeweizen IV (WLP380)

Anybody have any experience with this yeast? I'm going to give it a shot in the hefeweizen I'm brewing soon. My usual Wyeast Weihenstephan 3068 was in stock, but the packs were about 10 months old and I didn't trust the viability. I'm not too surprised, since they only carry a few Wyeast strains. The WLP380 they had in stock had a "Best before" date of October 25, 2010, which means it was made 6/25/10. Not bad.

Anyway, this strain is supposed to be spicier and more clove forward. I've discovered I prefer the spicier/more balanced hefeweizens over the typical banana bombs.

Also, I've read a lot about doing a ferulic acid rest (111 degrees for 20 minutes) in order to get a more clovey taste in the beer. Anyone ever try this?

No White Labs here, just the wYeast.

I have a couple of vials of this in the fridge now. I think I'll get one going on a starter in a few days, then maybe make a Heffe this weekend. It's going to start getting warm soon...... Mmmmmmmm nice cold heffe on a nice warm day.

My hefe might have to be dumped. It got overcarbonated in the bottles, and combined with the light flavor, it doesn't make for a great beer.

i love me a low abv hefe when im working in 100F+ weather. any other beer spells bad news bears!
